Scotcheroos

 From Eileen Mach

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 16 oz package of chocolate chips or butterscotch
  • 6-7 cups of Rice Crispies 
  1. Combine and cook over low heat.
  2. Stir often until well dissolved.
  3. Remove from heat.
  4. Stir 6-7 cups rice crispies
  5. Press into 13 x 9 pan (well buttered)
  6. Melt 16oz package of chocolate chips or butterscotch
  7. Melt over low heat until well blended.
  8. Spread over rice crispies mixture

Coffee Cake

  • 1/2 pound margaine cream
  • 1 cup sugar
Add:
  • 2 well beaten eggs
  • 1/2 teaspoon vanilla
Add & Beat:
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 oz cream cheese
  • Sprinkle with 1 tlsp cinnamon & 3 tablespoon sugar
Grease bread pan
Bake at 350 for 1 hour

Peanut Bars

  • 1 cup shortening (1/2 butter or oleo / 1/2 crisco)
  • 1/2 cup white sugar
  • 1 1/2 cups brown sugar
  • 2 eggs - separated
  • 1 tsp cold water
  • 2 cups flour
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 package chocolate chips (6 oz)
  • 1 cup salted peanutes with shells
  1. Cream shortening.
  2. Add 1/2 cup white sugar + 1/2 cup brown sugar.
  3. Add yolks with water and vanilla.
  4. Add flour with salt.
  5. Put in 9 x 13 pan.
  6. Then springlk chocolate chips on top of dough
  7. Pres chips into dough
  8. Beat egg whites stiff
  9. Add 1 cup brown sugar
  10. Spread on dough
  11. Spread on peanuts - on egg white mixture
  12. Bake 30 minutes @ 350
  13. Cut while warm

Hot Cranberry Tea

  • 1 1/2 Qts cranberry juice
  • 1 cup sugar
  • 3 Qts water
  • 12 whole cloves
  • 1 stick cinnamon
  • 1 large can (12 oz) frozen orange juice with 1 can of water
  • 1 large frozen leamonade with 1 can of water
  • 2 cups pineapple juice
Combine cranberry juice, suage, + 1 qt of water, with cloves and cinnamon
Simmer for 15 minutes.
Then add remaining and heat for 1 minute.

Dill Dip

  • 1 cup sour cream
  • 1 cup miracle whip
  • 2 tablespoons dill weed
  • 2 tablespoons dry onion flakes
  • 1 tablespoon laraway salt

Grandma Marie Engels Cookies

From Marie Engels

Makes half of recipe

  • 1 cup shortening
  • 2 cups brown sugar
  • 3 eggs
  • 4 tsp warm water over 1 tsp soda
  • 1 tsp nutmeg
  • 6 cups flower 

Cream shortening and sugar

Add eggs , water, soda and flower over.

Bake 12 mins at 350

Grasshopper Cake

  • 1 White Cake Mix
  • 4 Tblsp. Cream-de-mint

Let cake cool. Spread 1 can of Hershey fudge over cake.

1 large Cool-Whip mix with cream-de-mint + spread over cake.

Pizza Burgers

  • 1 pound hamburger
  • 1 jar pizza sauce
  • 1/4 package shredded parmesan cheese
  • 1 package mozzarella cheese
Brown meat. Drain.
Add sauce and cheese.
Simmer for 15 minutes.
Bake at 350.
Put sauce and meat on hamburger buns. Cover with Mozzarella cheese

Meatloaf

  • 2 pounds meat
  • 1 1/2 onion
  • 1 cup crackers
  • 1/2 cup milk
  • 1 egg
  • 2 tablesppon worchester sauce
  • 1 teaspoon salt
  • 1 teaspoon basil
  • 1 teaspoon Allegro (?)
  • 1/2 teaspoon pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup catchup
  • 2 tablespoons brown sugar  

Bake at 350 for 75 minutes in 9 x 13 pan

Puppy Chow

Melt in large bowl in microwave
  • 1 stick oleo
  • 1 cup peanut butter
  • 1 (12 oz) package chocolate chips
Pour a 12 oz package of crispex cereal into the melted mix and stir until all cereal is covered.

Put 3 cups powdered sugar in a large paper bag. Add the coated cereal and mix well.

Pumpkin Dip

  • 1 (8oz) package cream cheese
  • 1 (15oz) canned pumpkin
  • 2 cups powdered sugar
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
Mix

Serve with Anna's Thing Ginger Cookies (available at Pick 'n Save or Walgreen's)

Peanut Butter Balls

  • 2 Cups Graham Crakers
  • 2 Cups Powedered Sugar
  • 1 Cup Peanut Butter
  • 1 Stick Butter

Mix

Roll in balls & let sit

Dip in chocolate

Mashed Potatoes

5 lbs potatoes (~ 9 large)

Boil + Mash

 

Add:

  • 2 3oz cream cheese
  • 1 cup sour cream
  • 1 tsp onion salt
  • ¼ tsp pepper
  • 1 tsp salt
  • 2 tsp butter

 

Can be frozen for 2 weeks

To freeze, buttered pan and dot with butter

Bake at 350 for 30 min.

Mom's Chocolate Chip Cookies

  •  2 cups flour
  • 1 tsp baking soda
  • ¾ tsp salt
  • 2/3 cup shortening
  • 1 cup sugar

Blend dry ingredients

  •  1/3 cup milk
  • 2 tsp coco
  • ½ chopped nuts

Blend ½ of dry ingredients.

Blend in the rest

Bake at 400

Mom’s M&M Cookies

  •  2 sticks margarine
  • 1 cup brown sugar
  • ½ cup sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 2¼ cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1½ cup M&Ms

 Bake @ 350 for 10 minutes

Ground Beef Stroganoff

Brown in frying pan 1 pound of ground beef + 1 tablespoon of margarine

Add:

  • 2 tablespoons of instant onion
  • 1½ teaspoon of Paprika
  • 1 10oz can of cream of mushroom
  • 1 2oz can of mushroom
  • ½ cup of sour cream
  • Salt
  • Pepper
  • Dash of Worchester Sauce
Serve over rice or noodles.

Lemon Bars

  • Mix 1 cup butter + 1½  cup Flour + ½ cup poweder sugar
  • Put in 350 in pan 9 x 13 x 20”

Beat: 4 eggs + 4 tablespoons floor + 4 tablespoons Lemon Juice + 2 cup sugar

Pour over crust.

Bake 20 minutes @ 350.

Parents’ Club Chili

Parents’ Club Chili 
  • 2 (1 pound) cans Kidney Beans
  • 3 large onions chopped
  • 3 green peppers chopped
  • 2½ pounds ground beef
  • 2 (1 pound) cans tomatos chopped
  • 3 (15 oz) cans tomato sauce
  • 3-4 tablespoons chili powder
  • ¼ teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • 2 teaspoons salt
Drain beans, set aside, reserve juice. 
Brown onion, green pepper and meat. Drain the fat.

Add beans and rest of ingredients. 

Cover and simmer 1½ - 2 hours, add reserve liquid as needed.
